Ingredients
  • 6 small frozen chicken tenders (or 3 larger tenders to cut in half after cooking)
  • 1 pound spicy goetta (regular goetta or breakfast sausage can be substituted)
  • 1 tablespoon butter
  • 1/4 cup flour
  • 2 1/2 cups whole milk
  • kosher salt, pepper, garlic powder, crushed red pepper flakes, your favorite hot sauce
  • 1 (6-count) package St. Pierre Belgium Waffles (or 6 small waffles of choice)
Instructions
  1. Cook the chicken tenders either in the oven or air fryer according to package directions.

  2. Set a large skillet or your Blackstone griddle over medium heat. Add the spicy goetta to the skillet or griddle and cook 5 to 6 minutes, breaking it apart with spatulas.

  3. Transfer the goetta to a large skillet if you cooked this on your griddle and place the skillet on the griddle. To the skillet with the goetta, add the butter and flour and cook 2 to 3 minutes, mixing.

  4. Pour the milk into the skillet (either on the stove or your griddle) along with kosher salt, pepper, garlic powder, crushed red pepper flakes, and hot sauce. Let this simmer for 8 to 12 minutes, mixing a few times.

  5. Lightly toast or warm the waffles either in your air fryer, oven, or place them on the griddle for a few minutes.

  6. Assemble the dish with a crispy chicken tender on each waffle and top with the goetta gravy with more hot sauce if desired.

Note: If goetta gravy gets too thick, stir in a little more milk.
