Ingredients
  • 2 poblano peppers diced, seeds and stems removed
  • 2 jalapeno peppers diced, seeds and stems removed
  • 1 red bell pepper diced, seeds and stems removed
  • 1 onion diced
  • 7 to 8 cloves garlic minced
  • 1 15 ounce can corn drained
  • 1 15 ounce can black beans drained and rinsed
  • 1 28 ounce can crushed tomatoes
  • 1 14 ounce can vegetable broth
  • 1 4 ounce can green chiles (optional)
  • 3 to 4 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 tablespoon cumin
  • kosher salt, pepper, crushed red pepper flakes
  • Optional: cheese, sour cream, hot sauce, crackers
Instructions
  1. Add all of the ingredients to the slow cooker and stir until combined. Turn it on low for 7 to 9 hours.

  2. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, chili powder, paprika, and/or cumin if needed.

  3. Serve with toppings such as cheese, sour cream, hot sauce, crackers.
