Ingredients
  • 1 pound jumbo shrimp peeled and deveined
  • 1 Tbsp olive oil
  • 1 to 2 Tbsps seasoning blend of choice (Old Bay, all purpose seasoning, dry sriracha seasoning, or your own blend)
  • Optional: kosher salt, pepper (depending if your seasoning blend has salt and pepper)
  • 1/3 cup yum yum sauce
  • 2 Tbsps sweet chili sauce
  • 1 to 2 Tbsps sriracha
  • 2 cups slaw mix (I used 2 cups of a salad kit mix that had cabbage, carrots, cilantro, and lettuce)
  • 1/3 cup diced mango
  • soft tortillas
  • Optional: lime wedge, cilantro for garnish
Instructions
  1. Pat the shrimp dry and put them in a bowl with the olive oil, seasoning blend of choice, and kosher salt and pepper if using. Toss until evenly mixed.

  2. Put the shrimp on a baking sheet and bake in a 400 degree oven for 8 to 10 minutes. Or put them in an air fryer basket and set to 400 degrees for 8 to 10 minutes.

  3. While the shrimp cook add the yum yum sauce, sweet chili sauce, and sriracha to a bowl and stir until combined.

  4. Put the slaw and mango in a bowl and add a few spoonfuls of the sauce, toss until mixed.

  5. Warm the soft tortillas, add some of the mango slaw, some shrimp, and drizzle some more of the sauce over top. Serve with a lime wedge and cilantro for garnish if desired.
