Shrimp Chorizo Sheet Pan Fajitas is an easy one pan dinner recipe, a family favorite meal that takes minutes to throw together!

Ingredients
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 to 2 jalapeno peppers
  • 1 onion
  • 2 tablespoons olive oil
  • 1 1/2 to 2 tablespoons fajita or taco seasoning blend (store bought or homemade) plus more to sprinkle over top
  • kosher salt, pepper
  • 10 ounces ground chorizo sausage
  • 4 to 5 cloves garlic minced
  • 1 pound shrimp peeled and deveined
  • Optional: soft flour tortillas, lettuce, cheese, sour cream, hot sauce, lime wedges, etc.
Instructions
  1. Slice the peppers (seeds and stems removed), and peel and slice the onion. Place them on a lined baking sheet. Add the olive oil, fajita or taco seasoning, kosher salt, and pepper. Toss until evenly coated.

  2. Break apart the chorizo sausage into smaller pieces and add them evenly around the sheet pan on top of the veggies.

  3. Place in a 400 degree oven for 15 to 18 minutes. Toss a few times.

  4. Add the garlic and shrimp to the baking sheet. Use tongs to carefully toss together. Sprinkle a little more fajita or taco seasoning over top. Place back into the 400 degree oven for 6 to 8 minutes.

  5. Serve with flour tortillas and optional toppings such as lettuce, cheese, sour cream, hot sauce, lime wedges, etc. if desired.

    Note: For a low carb option, serve over lettuce for a fajita salad with toppings of choice.
