
Prosciutto and Asparagus Alfredo is a simple pasta dish with crispy prosciutto in a store-bought or homemade alfredo sauce!
Boil pasta according to package directions in salted water. Set aside 1/2 cup pasta water before draining. Cut prosciutto into 2-inch pieces using kitchen scissors.
While pasta is boiling, set a large skillet over medium heat. Add prosciutto and cook about 3 minutes until crisp, flipping a few times. Remove from skillet.
Add olive oil, asparagus, kosher salt, and pepper to same skillet over medium heat. Cook 4 to 5 minutes, stirring a few times.
Add pasta, pasta water, and alfredo sauce to skillet with asparagus. Toss until combined with tongs and cook 1 more minute.
Serve topped with crispy prosciutto and basil or green onions if desired.
Homemade Alfredo Sauce
To a medium saucepan add 2 tablespoons butter and once melted add 1 1/2 cups heavy cream, bring to a boil and reduce the heat to simmer for 5 minutes. Watch carefully as it comes to a boil, so it does not bubble over.
Add 3/4 cup shredded parmesan cheese, kosher salt, and pepper and stir until melted.
