
A combo of pizza and quesadillas made into one fun and easy dish!
Drizzle some olive oil in a large skillet or Blackstone griddle over medium to medium-low heat. Lay a tortilla flat in the skillet, or all of them if using the griddle.
Sprinkle cheese and pepperoni on one side of the tortilla (and Italian seasoning or crushed red pepper flakes if desired). Fold the empty side of the tortilla on top of the side with the filling.
Wait 1 to 2 minutes and flip the quesadilla over and cook an additional 1 to 2 minutes. Repeat with the remaining tortillas if not using the flat top griddle.
Serve with pizza sauce for dipping.
