Ingredients
  • 1 1/2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
  • 1 large Honeycrisp apple diced
  • kosher salt, pepper, crushed red pepper flakes, seasoning blend of choice (I used Old Bay)
  • 3 tablespoons Dijon or whole grain mustard
  • 3 tablespoons pure maple syrup
  • Optional toppings: goat cheese crumbles, dried cranberries, fresh thyme
Instructions
  1. Put the chicken and diced apples on a lined baking sheet. Season with kosher salt, pepper, crushed red pepper flakes, and your seasoning blend of choice.

  2. Drizzle the mustard and maple syrup over top and mix together on the sheet pan until combined.

  3. Bake in a 400-degree oven for about 25 minutes. Add toppings of choice such as goat cheese crumbles, dried cranberries, and fresh thyme.
