Lox and Bagel Casserole turns this traditional brunch recipe into a breakfast casserole recipe made with smoked salmon or lox!

Ingredients
  • 3 bagels cut into cubes
  • 4 to 6 ounces lox or smoked salmon flaked into small pieces
  • 8 eggs
  • 1 1/2 cups milk (I used whole milk)
  • kosher salt, pepper, Old Bay seasoning
  • 8 ounce block cream cheese cut in 8 pieces
  • 1/2 cup thin sliced red onions
  • Optional: lemon wedges on the side, chopped parsley
Instructions
  1. Put the bagel cubes and lox or smoked salmon pieces in a greased 9x13 casserole dish.

  2. Crack the eggs in a bowl add the milk, kosher salt, pepper, and Old Bay seasoning. Whisk until combined.

  3. Pour this mixture over the lox/ salmon and bagels. Press down so the bagels start to absorb the egg mixture. Let this sit for 10 minutes, pressing down a few more times.

  4. Bake in a 375 degree oven for 30 minutes.

  5. Put the pieces of cream cheese and sliced red onions over the casserole. Bake another 12 to 15 minutes. Spread the melty cream cheese slightly with the back of a spoons and serve with lemon wedges or parsley over top.
