Ingredients
  • 1 tablespoon cooking oil of choice
  • 1/2 pound shrimp peeled, deveined, and cut into smaller pieces (I cut each jumbo shrimp into thirds)
  • pinch Old Bay or seafood seasoning blend
  • 1 tablespoon soy sauce
  • 1 tablespoon hot honey
  • 1 (8.5-ounce) pouch microwavable Jasmine rice
  • 1 avocado mashed or sliced
  • Toppings or additions of choice: cilantro, spicy mayo, sesame seeds, ginger soy glaze (Asian section of store or Amazon), pickled ginger, wasabi, more soy sauce
Instructions
  1. Set a skillet or griddle over medium heat. Once hot add cooking oil, shrimp, and Old Bay. Cook 2 minutes and add soy sauce and hot honey. Cook 1 to 2 more minutes, mixing a few times.

  2. Microwave the rice according to package directions or if cooking on a griddle, add it to the griddle and mix with spatulas as the shrimp cooks.

  3. Divide rice between two bowls and top with hot honey shrimp and avocado.

  4. Top with desired additions such as cilantro, spicy mayo, sesame seeds, ginger soy glaze, pickled ginger, wasabi, and/or more soy sauce.
