Honey Lemon Buffalo Chicken Sandwiches can be grilled or cooked on your Blackstone griddle, a simple sandwich recipe with lots of flavor!

Ingredients
  • 4 boneless, skinless chicken thighs (or thinner sized chicken breasts)
  • kosher salt, pepper, seasoning blend of choice
  • cooking oil of choice (for griddle or skillet, not needed for grill)
  • buffalo sauce, hot honey, lemon wedges (amount depends on your preference)
  • 4 slices cheese of choice (I used colby jack)
  • 4 buns (I used brioche buns)
  • shredded lettuce, pickles
Instructions
  1. Season both sides of the chicken with kosher salt, pepper, and seasoning blend of choice.

  2. Preheat your Blackstone griddle, grill, or large skillet over medium heat. Add cooking oil of choice for griddle or skillet (not needed for grill) and the chicken.

  3. Cook the chicken for about 10 minutes, flipping a few times. Drizzle some buffalo sauce, hot honey, and squeeze lemon over both sides of chicken during the last half of cooking.

  4. Place the slices of cheese over top to melt. Also add buns, cut side down for a minute to toast them.

  5. Assemble the sandwiches on the buns with the cheesy chicken, more buffalo sauce, hot honey, and/or lemon if desired, shredded lettuce, and pickle. Enjoy with plenty of napkins!
