High Protein Turkey Taco Meal Prep Salads is an easy and delicious lunch or dinner recipe part of my Blackstone griddle meal prep series!

Ingredients
  • cooking oil of choice
  • 1/2 pound ground turkey (I made the whole pound and used the rest for stuffed taco avocados, details in post above)
  • taco seasoning blend of choice
  • 1 (11.6-ounce) Mexican Street Corn Salad Kit (mine was Taylor Farms)
  • 1/2 cup black beans (mine were canned, drained and rinsed)
  • 1/2 cup shredded cheese of choice
  • 1 cup chopped, fresh cilantro
  • Optional: hot sauce, lime juice
  • 2 small avocados
Instructions
  1. Note: This is part of my Blackstone High Protein Meal Prep Series, so the turkey was already cooked when I assembled these salads. Check out the meal prep series in post above with the 4 high protein meals I made with the turkey (and sweet potatoes)… or follow these directions.

    Preheat a skillet or your Blackstone griddle to medium heat. Add cooking oil of choice, ground turkey, and taco seasoning. Cook the turkey 7 to 10 minutes, mixing and breaking it apart with your spatulas.

  2. Divide the salad kit between 2 meal prep containers. Add the cooked taco meat, black beans, cheese, cilantro, and the topping packet from the salad kit.

  3. Put the dressing into two cups with lids, I also added a little hot sauce and lime juice to each dressing container. Dice the avocado and add to the salads right before enjoying.
