Goat Cheese Tater Tot Bites are little tater tot cups made in a muffin tin cooked until crisp and filled with herb goat cheese and honey

Ingredients
  • 36 tater tots thawed
  • nonstick spray
  • 4 oz goat cheese log (I used an herb goat cheese)
  • 2 to 3 Tbsps honey
  • Optional: chives for garnish
Instructions

  1. Set the tater tots out to thaw and spray a muffin tin with nonstick spray.

  2. Put 3 tater tots in each muffin space. Use a shot glass or small cup to press the tater tots into a little cup. Bake in a 450 degree oven for 15 to 17 minutes.

  3. Cut the goat cheese log into 12 equal pieces. Place a piece into each tater tot cup and bake an additional 6 to 7 minutes.

  4. Drizzle each cup with some honey and garnish with chives if desired.
