Ginger Peanut Chicken Bites is an easy dinner recipe with chicken thighs and an easy marinade with ginger dressing served over rice!

Ingredients
  • 2 pounds boneless skinless chicken thighs (or breasts)
  • 1/2 cup ginger salad dressing (I used Makoto)
  • 3 tablespoons soy sauce
  • 5 to 6 cloves garlic minced
  • 2 tablespoons olive oil
  • kosher salt, pepper
  • 1 cup peanut sauce (Asian section of grocery store)
  • Optional: cooked Jasmine rice, chopped peanuts, lime wedges, cilantro, sriracha, more peanut sauce
Instructions
  1. Cut the chicken into bite size pieces and place them in a gallon size plastic bag. Add the ginger salad dressing, soy sauce, and garlic. Massage the bag until combined and marinate in the fridge for a few hours or overnight.

  2. Set a large skillet over medium heat and once hot add the olive oil, chicken bites, and a small amount of kosher salt and pepper. Cook 7 to 9 minutes, stirring a few times.

  3. Add the peanut sauce and cook another 2 to 3 minutes. Serve over rice if desired and with chopped peanuts, lime wedges, and cilantro, also add sriracha or more peanut sauce if desired.
