
Ginger Peanut Chicken Bites is an easy dinner recipe with chicken thighs and an easy marinade with ginger dressing served over rice!
Cut the chicken into bite size pieces and place them in a gallon size plastic bag. Add the ginger salad dressing, soy sauce, and garlic. Massage the bag until combined and marinate in the fridge for a few hours or overnight.
Set a large skillet over medium heat and once hot add the olive oil, chicken bites, and a small amount of kosher salt and pepper. Cook 7 to 9 minutes, stirring a few times.
Add the peanut sauce and cook another 2 to 3 minutes. Serve over rice if desired and with chopped peanuts, lime wedges, and cilantro, also add sriracha or more peanut sauce if desired.
