Ingredients
  • 4 to 6 slices bacon
  • 1/2 cup cottage cheese
  • 1/4 cup buttermilk
  • 1/4 cup fresh herbs of choice (optional)
  • 1 1/2 tablespoons dry Ranch seasoning
  • kosher salt, pepper
  • 6 cups chopped lettuce or salad mix of choice
  • 1 cup grape tomatoes cut in half
  • 1 cup cooked, chopped chicken (optional)
Instructions
  1. Preheat a skillet or griddle to medium low. Use kitchen scissors to cut bacon into bite size pieces right into the skillet or griddle. Cook 7 to 9 minutes, mixing a few times. Remove and place on paper towels to absorb excess grease.

  2. Put cottage cheese, buttermilk, fresh herbs if using, ranch seasoning, kosher salt, and pepper in food processor or blender. Blend until smooth, about 1 minute.

  3. Divide lettuce between 2 bowls or plates and top each with tomatoes, bacon, chicken (if using), and cottage cheese ranch dressing.
