
Blackstone Chicken Pesto Quesadillas, a super easy dinner recipe for the griddle that is so good dipped in pizza sauce!
Bring all ingredients (except for the pizza sauce) to the griddle and preheat to medium for several minutes.
Add some cooking oil of choice and lay the large tortillas flat over the oil.
To one side of each tortilla add some mozzarella cheese, goat cheese and sun dried tomatoes (if using), chicken, pesto, and more mozzarella cheese.
Use your hibachi spatulas to fold the empty side of each tortilla over the filled side. Press them closed. Cook 1 to 2 minutes per side or until cheese is melted and tortillas are crisped how you like them.
Cut the quesadillas and serve with pizza sauce for dipping.
