Flavorful blackened grilled shrimp over a yummy caesar salad

Ingredients
  • 1 pound jumbo shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon garlic paste
  • 1 tablespoon lemon juice
  • Blackening or Cajun seasoning blend (I used Emeril's)
  • 2 (8 oz) bags Caesar salad kits (the kits with the dressing, croutons, and cheese already included)
  • wooden kabob skewers that have been soaking in water for several hours if grilling
Instructions
  1. Pat the shrimp dry with a paper towel and place them in a bowl.

  2. Add the olive oil, garlic paste, lemon juice, and 1 Tbsp of the blackening seasoning. Toss until evenly coated.

  3. Put the shrimp on the kabob skewers and sprinkle with the remaining blackening seasoning.

  4. Preheat your grill or Blackstone griddle to medium high. Cook the shrimp kabobs on the grill or griddle for 2-3 minutes per side.

    Note: Add cooking oil of choice if cooking on your griddle.

  5. Prepare the Caesar salad kits according to the package directions, toss until the dressing is evenly coated and top each salad with the blackened shrimp.
