
Blackened steak with blue cheese served as a taco
Brush both sides of the steak with olive oil and sprinkle with the blackened seasoning and kosher salt and pepper.
Cook the steak on your grill or Blackstone griddle over medium to medium high heat 3-4 minutes per side, depending on thickness and how you like it cooked.
As the steak rests, turn the grill or griddle down to low and grill the tortillas a few seconds per side.
Dice the steak into 1/2 inch pieces. Fill the tortillas with steak, drizzle with sour cream, add shredded lettuce, cheddar cheese, and blue cheese.
