Ingredients
  • 2 cups leftover pulled pork (or chicken) mixed with BBQ sauce
  • 1 8 ounce block cream cheese at room temperature
  • 2 cups shredded cheese of choice (I used Monterey Jack)
  • 1 4 ounce can diced green chiles or jalapenos
  • kosher salt, pepper, BBQ seasoning
  • 1 30 ounce bag frozen tater tots (you may not use the entire bag)
  • Optional: green onions, more BBQ sauce, hot sauce
Instructions
  1. Put the pulled pork or chicken in BBQ sauce, cream cheese, shredded cheese, green chiles or jalapenos, kosher salt, pepper, and BBQ seasoning in a bowl. Stir until combined, which does take a minute or two.

  2. Put this mixture in a greased 9x13 casserole dish and spread flat. Add the frozen tater tots on top in a single layer and season with more BBQ seasoning.

  3. Bake in a 400 degree oven for 30 to 40 minutes. Garnish with green onions and serve with more BBQ sauce or hot sauce if desired.

Note: The tots will be crisp on top at first, but lose their crispiness if not served right away.
