Ingredients
  • 1/3 cup mayo, nonfat plain Greek yogurt, or blended cottage cheese
  • 1/3 cup sweet Thai chili sauce
  • 2 tablespoons sriracha
  • 4 mahi mahi fillets
  • 1 egg
  • 1/2 cup flour
  • kosher salt, pepper, seasoning blend of choice (optional)
  • olive oil cooking spray
  • 2 to 3 cups broccoli florets
  • 2 (8-ounce) microwave rice pouches (I used cilantro lime rice)
Instructions
  1. Put mayo or yogurt, sweet Thai chili sauce, and sriracha in a bowl. Stir until combined to make the bang bang sauce.

  2. Cut the mahi mahi into bite size chunks. Crack the egg in a bowl and beat with a fork. Put flour, kosher salt, pepper, and a seasoning blend (if using) in another bowl, stir until combined.

  3. Dip each mahi bite in the egg and then coat with the flour. Place them in a single layer in the air fryer basket. Spray olive oil cooking spray over top of the mahi bites.

  4. Set air fryer to 400 degrees for 8 minutes. Remove and let cool slightly. Place broccoli in air fryer, spray olive oil over top and season with kosher salt, pepper, and seasoning blend if using. Set air fryer to 400 degrees for 8 minutes while you assemble the bowls.

  5. Microwave rice according to package directions. Divide between 4 bowls. Toss mahi bites in the bang bang sauce and put them over the rice with the broccoli.

Note: I put the mahi mahi in a container with a lid and some of the sauce, shake until evenly coated.

  6. Drizzle any extra sauce over top and serve right away.
