Ingredients
  • 6 boneless pork chops (about 1 inch thick)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 tablespoon garlic paste
  • kosher salt, olive oil, crushed red pepper flakes
  • 6 ounces onion jam (or fig jam)
  • 6 ounces goat cheese crumbles
  • 3 ounces balsamic glaze
  • Optional: fresh thyme
Instructions
  1. Place the pork chops in a gallon size plastic bag. Add the balsamic vinegar, honey, olive oil, and garlic paste. Massage the bag until evenly coated. Marinate at least 1 hour.

  2. Remove the pork chops from the marinade and sprinkle both sides with kosher salt, pepper, and crushed red pepper flakes.

  3. Place the pork chops on a grill or Blackstone griddle over medium heat for 3-5 minutes per side (depending on thickness). Add a little cooking oil first if griddling.

  4. Top each pork chop with the onion jam, goat cheese, balsamic glaze, and fresh thyme (if using).
