Ingredients
  • 8 to 10 jalapeno peppers (mine were medium to large in size)
  • 8 ounces cream cheese at room temperature
  • 1 cup shredded cheese of choice
  • BBQ or Cajun seasoning blend
  • 16 to 20 medium size shrimp peeled and deveined
  • 16 to 20 slices bacon (not thick cut)
Instructions
  1. Cut the jalapenos peppers in half lengthwise. Scrape out the seeds and ribs out with a spoon.

Note: If you have sensitive skin gloves are recommended.

  2. Put the cream cheese, shredded cheese, and some of the BBQ or Cajun seasoning in a bowl. Stir until evenly mixed, this does take a minute or two but the room temp cream cheese helps.

  3. Fill each jalapeno half with the cheesy mixture. Lightly season the shrimp with more of BBQ or Cajun seasoning and top each popper with a shrimp.

  4. Wrap a slice of bacon around each popper, overlapping slightly and tucking the bacon at the end if needed. Sprinkle more BBQ or Cajun seasoning over top.

  5. Oven Directions: Put the poppers on a wire baking rack over a lined baking sheet. Bake in a 350 degree oven for 40 to 50 minutes, or until the bacon is cooked how you prefer.

Pellet Grill Directions: Preheat the pellet grill or smoker to 250 degrees. Place the poppers on the grate for 2 to 2 1/2 hours.
