Ingredients
  • 10 slices bacon
  • 1 onion diced
  • 2 (12-ounce) bags frozen cauliflower rice thawed
  • 1 (12-ounce) bag frozen peas and carrots thawed
  • 6 tablespoons soy sauce
  • 2 tablespoons garlic paste or minced garlic
  • 2 tablespoons ginger paste or minced ginger
  • 2 eggs beaten
  • 1 (15-ounce) can pineapple tidbits drained
  • Optional: green onions, Sriracha, extra soy sauce
Instructions
  1. Set a large skillet or your Blackstone griddle over medium heat, use kitchen scissors to cut the bacon. Cook 5 to 7 minutes. Remove the bacon onto paper towels and set aside. Drain most of the bacon grease, leaving about 2 tablespoons of grease in the skillet or griddle.

  2. Add the diced onion and cook 3 to 4 minutes, stirring occasionally. Add the thawed cauliflower rice and the peas and carrots. Cook 4 to 5 minutes, stirring and mixing occasionally.

  3. Add the soy sauce, garlic, and ginger. Cook 3 to 5 more minutes, stirring as it cooks.

  4. Add the beaten egg and cook 2 more minutes, stirring, until the egg is cooked through.

  5. Add the cooked bacon and pineapple, stir until evenly mixed in and warmed through. Serve with green onions, Sriracha and extra soy sauce on the side if desired.
