Asian Zing Salmon and Potatoes is a simple sheet pan dinner idea using Asian zing sauce and any seasoning blend that you prefer!

Ingredients
  • 1 1/2 pounds redskin potatoes diced
  • olive oil, kosher salt, pepper, seasoning blend of choice (I used a honey jalapeno seasoning)
  • 1 (2-pound) side of salmon
  • 2 tablespoons soy sauce
  • 1/3 cup sweet Thai chili sauce or Asian Zing sauce
  • Optional: sesame seeds, sliced green onions
Instructions
  1. Dice the potatoes with the skin on and put them on a lined baking sheet. Drizzle olive oil on the potatoes and season with kosher salt, pepper, and seasoning blend.

  2. Toss until combined and bake in a 375-degree oven for 25 minutes.

  3. Carefully scoot the potatoes to the edges of the sheet pan and place the salmon in the center of the pan. Brush soy sauce over top and season the salmon with kosher salt, pepper, and seasoning blend.

  4. Place back into the 375-degree oven for 10 minutes. Brush half of the Asian Zing sauce over top and bake 10 more minutes. Serve with remaining sauce for dipping and garnish with sesame seeds and green onions if desired.
