Ingredients
  • 3 ounces sliced prosciutto
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon honey
  • kosher salt, pepper, Italian seasoning
  • 4 to 6 cups fresh spinach
  • 1 Honeycrisp apple diced
  • 2 ounces crumbled goat cheese
Instructions
  1. Set a large skillet or Blackstone griddle (indoor or outdoor) to medium heat. Place the slices of prosciutto and cook 4 to 6 minutes, flipping a few times. Remove once crisp and place on a plate lined with paper towels to cool.

  2. Put the olive oil, balsamic vinegar, Dijon mustard, honey, kosher salt, pepper, and Italian seasoning in a bowl. Whisk until combined.

  3. Divide the spinach between two plates or bowls. Break apart the crispy prosciutto over top and add the apples, goat cheese, and dressing.
