Ingredients
  • 4 packages ramen noodles (any flavor, discard flavor pack)
  • 3/4 cup Japanese mayo or mayo
  • 3/4 cup sweet Thai chili sauce
  • 2 to 4 tablespoons sriracha (more or less depending on spice preference)
  • 2 tablespoons vegetable or olive oil
  • 1 onion diced
  • 5 to 6 cloves garlic minced
  • kosher salt, pepper
  • 1 bunch green onions sliced
  • 1 to 2 tablespoons lemon juice
Instructions
  1. Boil the ramen noodles according to the package directions (don't add flavor packet). Drain and rinse the noodles very well with cold water so they don't get mushy.

  2. Put the mayo, sweet Thai chili sauce. and sriracha in a bowl. Stir until evenly combined.

  3. Set a large skillet or wok over medium high heat for a few minutes. Add the vegetable or olive oil and the onion. Cook 1 to 2 minutes and then add the garlic, kosher salt, pepper, and cooked noodles.

  4. Stir fry the noodles for 3 to 4 minutes.

  5. Add half of the bang bang sauce and cook 4 to 5 more minutes. Add the green onions and lemon juice, cook 2 to 3 more minutes.

  6. Toss with the remaining bang bang sauce right before serving.
