Ingredients
  • 4 catfish fillets
  • 1 1/2 Tbsps flour leave out if dong Keto/ low carb
  • 1 1/2 Tbsps Cajun seasoning
  • cooking oil of choice or butter
  • 1 pound asparagus bottom inch or two cut off
  • Optional: spicy mayo, lemon wedges
Instructions
  1. Pat the catfish fillets dry with paper towels. Sprinkle the flour on both sides and rub the flour to a thin, even layer. Season both sides with most of the Cajun seasoning (save some for the asparagus).

  2. Preheat the griddle to medium heat for several minutes. Once hot add some cooking oil or butter and the seasoned catfish and asparagus. Sprinkle some Cajun seasoning on the asparagus as it hits the griddle.

  3. Cook 8 to 10 minutes total, flipping the catfish halfway through and turning the asparagus a few times. The asparagus may be done before the catfish, if so remove before the fish.

  4. Serve with spicy mayo and/or lemon wedges if desired.
