Jerk Salmon with Mango Relish is a healthy, flavorful, easy meal to prepare! Great in the oven or air fryer, served over rice or cauliflower rice

Ingredients
  • 1/2 Tbsp olive oil
  • 1 small red onion (or 1/2 regular size red onion) diced
  • 2 mangos peeled and diced
  • 1 jalapeno diced, seeds removed
  • 1/2 cup cilantro chopped
  • 2 Tbsps red wine vinegar
  • 1 Tbsp honey
  • kosher salt, pepper, crushed red pepper flakes
  • 4 salmon fillets
  • 1 Tbsp soy sauce
  • 1 Tbsp Caribbean Jerk seasoning
  • Optional: rice or cauliflower rice, and spicy mayo
Instructions
  1. Put a saucepan over medium heat and add the olive oil and onion. Cook 3 to 4 minutes.

  2. Add the mango, jalapeno, most of the cilantro (save some for garnish), vinegar, honey, kosher salt, pepper and crushed red pepper flakes. Cook 5 to 6 more minutes.

  3. Brush the salmon fillets with the soy sauce and sprinkle the Caribbean Jerk seasoning on all sides.

  4. Cook the salmon according to one of these methods:

    Oven:

    Bake in a 400 degree oven for 12 to 14 minutes.

    Air Fryer: Air Fryer- Place the salmon in the air fryer basket and set it to 400 degrees for 12 to 14 minutes.

  5. Serve the salmon with the mango relish, cilantro, and with rice or cauliflower rice, and/or spicy mayo if desired.
