Slow Cooker Chipotle Ranch Chicken is a spicy and flavorful chicken dish that can be used for tacos, nachos, burritos, or served with Mexican rice!

Ingredients
  • 2 pounds boneless, skinless chicken breasts
  • kosher salt, pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1 7 oz can chipotle in adobo sauce
  • 2 Tbsps water
  • 1 10 oz can Rotel tomatoes
  • 1 cup ranch dressing
  • Optional: fresh cilantro for garnish
Instructions
  1. Put the chicken in the slow cooker. Sprinkle the kosher salt, pepper, chili powder, garlic powder, paprika, and cumin over top.

  2. Put the chipotle peppers in adobo sauce into a blender or food processor with 2 Tbsps water. Blend until smooth and spoon it over the chicken in the slow cooker.

    Note: Chipotle peppers are spicy, to decrease spice remove and discard a few of the peppers if desired.

  3. Add the can of rotel tomatoes over top and turn the slow cooker on low for 6 to 8 hours.

  4. Add the ranch dressing and shred the chicken with two forks right in the slow cooker. Add the cilantro if desired and use the chicken as a filling for tacos, nachos, burritos, or serve with Mexican rice.
