Ingredients
  • 1/2 cup mustard (yellow, whole grain, or dijon)
  • 1/2 cup honey
  • 1/4 cup mayo or light mayo
  • 1 pound green beans
  • 2 large chicken breasts
  • kosher salt, pepper
  • 1/2 cup panko breadcrumbs
Instructions
  1. Combine mustard, honey, and mayo in a bowl, whisk together, set aside.

  2. Remove the green bean stems and cut the green beans in half. 

  3. Cut the chicken breasts in half lengthwise, creating 4 thinner chicken breasts. Place on a lined baking sheet and sprinkle with kosher salt and pepper.

  4. Toss the green beans with a tablespoon of the honey mustard sauce and place them on the baking sheet around the chicken breasts. Top each chicken breast with a tablespoon of the honey mustard sauce and panko bread crumbs.

  5. Put the baking sheet in a 375 degree oven for 25 minutes. Set the broiler to high for last minute of baking to create a crisper panko coating.

  6. Serve with extra honey mustard sauce on the side.
