Ingredients
  • 3 cups cooked, shredded chicken
  • 1 large avocado
  • 1 cup diced mango
  • 1/2 cup chopped cilantro
  • 2 Tbsps mayo (or nonfat Greek yogurt)
  • 1 Tbsp lime juice
  • kosher salt, pepper
  • 1 head boston lettuce
Instructions
  1. In a large bowl combine chicken, avocado, 3/4 cup of the mango, cilantro, mayo, lime juice, kosher salt and pepper. Mix together and taste for seasoning. Add more kosher salt and pepper if needed.

  2. Separate the boston lettuce into individual lettuce wraps. Fill the lettuce wraps with the avocado chicken salad and top with remaining diced mango.
