Ingredients
For the Light Balsamic Dressing
  • 1/2 cup light mayo
  • 1 Tbsp balsamic vinegar
  • 1 tsp sugar
For the Cranberry Chicken Salad
  • 6 cups romaine lettuce (or lettuce of choice) chopped
  • 1 cup cooked, shredded chicken
  • 1/2 cup dried cranberries
  • 1/2 cup candied pecans
  • 1/2 cup crumbled blue cheese (or feta cheese)
Instructions
For the Light Balsamic Dressing
  1. In a small bowl, whisk together the light mayo, balsamic vinegar, and sugar. Taste and add more balsamic or sugar depending on your taste. Set aside.

For the Cranberry Chicken Salad
  1. Place 3 cups of lettuce on each bowl or plate. Evenly divide the cooked, shredded chicken, dried cranberries, candied pecans, and blue or feta cheese.

  2. Serve with the Light Balsamic Dressing.
