Air Fryer Eggplant Parmesan Fries have a crispy, crunchy, cheesy breading thanks to the air fryer and can be dipped in marinara sauce!
Cut the eggplant into fry size pieces, approx 1/2 inch thickness.
Beat the egg in one bowl. Combine the panko, parmesan cheese, kosher salt, and pepper in a separate bowl and stir until evenly mixed.
Dip each eggplant fry into the egg and then into the panko mixture. Press the panko slightly into the eggplant and place in the air fryer. Repeat with remaining eggplant fries.
Spray lightly with the olive oil cooking spray. Set the air fryer to 390 degrees for 8 to 10 minutes.
Serve with marinara sauce for dipping.
