Steak and Avocado Quesadillas are such a quick and easy one pan dinner idea, especially if you are using some leftover steak!
In a large skillet over medium low heat, pour 1/2 Tbsp olive oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet.
On one side of the tortilla add some cheese, steak, half of an avocado (sliced), and little more cheese. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes.
Remove from pan and repeat with the remaining ingredients. Makes 4 quesadillas. Serve with salsa, sour cream and/or hot sauce if desired.
