Air Fryer Chicken Meatball Subs are a delicious and easy meatball sub recipe all cooked to yummy perfection in the air fryer!
In a small skillet over medium heat add the olive oil and diced onion. Cook 4-5 minutes.
In a bowl add the cooked onion, ground chicken, bread crumbs, garlic, egg, parmesan cheese, kosher salt, and pepper. Mix together with your hands until evenly combined. Roll 18 meatballs with your hands and place in the air fryer basket.
Note: Meatballs can be made a day ahead and stored in the fridge until ready to cook.
Set the air fryer to 390 degrees for 15 minutes. Remove the meatballs from the basket and place 3 meatballs in each sub bun.
Spoon some tomato sauce over each sub and top with mozzarella cheese. Place the meatball sub back into the air fryer and set to 390 degrees for 3 minutes or until cheese is melted. Garnish with fresh parsley if desired.
Note: You may need to air fry the subs in two batches depending on the size of your air fryer.
