High Protein Jalapeno Popper Egg Bites
Meal prepping has been so helpful to me lately and really keeps me on track, these High Protein Jalapeno Popper Egg Bites are my new breakfast meal prep obsession!
I used turkey bacon to make them healthier, but regular bacon works too.
And I made the bacon on my Blackstone e-series indoor griddle while I prepped the other ingredients, making it super quick and with easy clean up.
Each bite packes almost 13 grams of protein and 197 calories!

How to make High Protein Jalapeno Popper Egg Bites
First put some cottage cheese, 6 eggs, protein powder, and diced jalapenos in a bowl.

Then add your cooked bacon or turkey bacon, just a little cheese, kosher salt, pepper, and breakfast seasoning into a bowl.
And stir until combined.

Spray a (12-count) regular size muffin pan with nonstick spray.
I used a silicone muffin pan on a baking sheet and the egg bites did not stick at all.
Use an ice cream scoop to add the batter to the muffin pan.
And bake in a 350-degree oven for 20 to 25 minutes.

Once High Protein Jalapeno Popper Egg Bites are cool, remove them and store in the fridge 🙂
I put mine in a covered container and warmed them up in the microwave to enjoy.

High Protein Jalapeno Popper Egg Bites
High Protein Jalapeno Popper Egg Bites is a healthy and easy meal prep breakfast recipe with turkey bacon, jalapenos, and cottage cheese!
Ingredients
- 1 cup cottage cheese
- 6 eggs
- 1/4 cup unflavored protein powder
- 2 to 3 jalapenos seeds removed, diced
- 1 pound cooked and crumbled bacon or turkey bacon
- 1/2 cup shredded cheese of choice
- kosher salt, pepper, breakfast seasoning blend
- nonstick spray
Instructions

Put the cottage cheese, eggs, protein powder, jalapenos, bacon, cheese, kosher salt, pepper, and breakfast seasoning into a bowl and stir until combined.
