
Szechuan Shrimp Zucchini Noodles are a spicy way to enjoy zucchini noodles, ready in just minutes and the shrimp pair perfectly with the Szechuan sauce!
Pat the shrimp dry and put them in a bowl with the soy sauce and garlic, toss until evenly combined and marinate for 5 to 10 minutes.
As the shrimp marinate, use a veggie spiralizer to make the zucchini noodles.
Set a skillet over medium high heat and add the sesame or vegetable oil. Once the oil is hot add the shrimp and cook 3 to 4 minutes, stirring occasionally. Remove the shrimp and set aside.
To the same skillet over medium high heat add the zucchini noodles. Cook 3 to 4 minutes, stirring occasionally.
Put the shrimp back into the skillet and add the Szechuan sauce, toss until evenly combined for 1 more minute.
Serve with chopped peanuts sprinkled over top if desired.
