Szechuan Shrimp Zucchini Noodles are a spicy way to enjoy zucchini noodles, ready in just minutes and the shrimp pair perfectly with the Szechuan sauce!

Ingredients
  • 1 pound jumbo shrimp peeled and deveined
  • 1 Tbsp soy sauce
  • 1 Tbsp garlic paste or minced garlic
  • 4 zucchini (mine were small in size)
  • 1 Tbsp sesame or vegetable oil
  • 3/4 cup Szechuan sauce (I used House of Tsang)
  • Optional: chopped peanuts
Instructions
  1. Pat the shrimp dry and put them in a bowl with the soy sauce and garlic, toss until evenly combined and marinate for 5 to 10 minutes.

  2. As the shrimp marinate, use a veggie spiralizer to make the zucchini noodles.

  3. Set a skillet over medium high heat and add the sesame or vegetable oil. Once the oil is hot add the shrimp and cook 3 to 4 minutes, stirring occasionally. Remove the shrimp and set aside.

  4. To the same skillet over medium high heat add the zucchini noodles. Cook 3 to 4 minutes, stirring occasionally.

  5. Put the shrimp back into the skillet and add the Szechuan sauce, toss until evenly combined for 1 more minute.

  6. Serve with chopped peanuts sprinkled over top if desired.
