Sushi Salad with Wasabi Vinaigrette is a lower carb way to enjoy sushi on a fresh bed of greens with a homemade wasabi dressing!

Ingredients
  • 2 1/2 tablespoons olive oil (or salad oil of choice)
  • 1 1/2 tablespoons rice vinegar (or white vinegar)
  • 1 tablespoon wasabi sauce (or 1/2 teaspoon of wasabi paste)
  • 1 teaspoon soy sauce
  • kosher salt, pepper
  • 1 (10-ounce) bag salad mix
  • 2 mini cucumber sliced
  • 1 (8-ounce) package imitation crab meat chopped
  • 1 large avocado sliced
  • Other toppings: pickled ginger, sriracha mayo, ginger soy glaze, black sesame seeds
Instructions
  1. Put the olive oil, vinegar, wasabi sauce, soy sauce, kosher salt, and pepper in a mason jar. Place the lid and shake until combined. Or put ingredients in a bowl and whisk until combined.

  2. Divide the salad mix between two bowls. Drizzle the wasabi vinaigrette over top.

  3. Divide the cucumber, crab, and avocado between the two salads. Add additional toppings such as pickled ginger, sriracha mayo, ginger soy glaze, and/or black sesame seeds if desired.
