Ingredients
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon garlic paste (or fresh minced garlic)
  • 1 tablespoon honey
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 tablespoon kosher salt
  • 1/2 tablespoon pepper
  • 1/2 tablespoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 whole chicken (4-6 pounds)
Instructions
  1. Combine first 10 ingredients (lime juice through cinnamon) in a bowl and stir until it forms a paste.

  2. Rub the paste over all sides of the whole chicken, separate the skin on the breasts and rub some of the paste between the skin and chicken breasts as well.

  3. Place in a smoker set to 225 degrees for 4-5 hours or until the internal temp is 170 degrees.

    Note: Can also be baked in the oven at 400 degrees for 1 hour, or until internal temp is 170 degrees.
