Nashville Hot Chicken Salads is a simple, healthy recipe with a high protein easy to make salad dressing for lunch, dinner, or meal prepping!

Ingredients
  • 1/2 cup cottage cheese
  • 3 tablespoons pickle juice
  • Nashville Hot seasoning blend, kosher salt, pepper
  • 4 to 6 cups lettuce or salad mix of choice
  • 1 1/2 cups cooked, shredded chicken (see notes below for a crispy chicken option)
  • 1/2 cup sliced pickles
  • 1/2 cup shredded cheese of choice
Instructions
  1. Put the cottage cheese, pickle juice, Nashville Hot seasoning, kosher salt, and pepper in a blender or food processor. Blend until smooth. Taste for seasoning and add more seasoning if needed, and more pickle juice if it's too thick.

  2. Divide the lettuce between two bowls or meal prep containers. Top each with chicken, pickles, and cheese. Drizzle the dressing over top right before serving. If you have extra dressing it's really good as a dip for chicken tenders.

Recipe Notes

I was trying to make these salads on the healthier side, but you could also air fry some frozen chicken strips or cook in the oven according to the package directions. Chop them once cooled slightly and add to the salads.
