Ingredients
  • 1 8 ounce block cream cheese at room temp
  • 8 ounces lump crab meat drain liquid if needed
  • 1/2 cup sweet Thai chili sauce (plus more for dipping)
  • 3 green onions sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon Old Bay seasoning
  • 9 to 11 jalapenos
  • 1/2 cup panko bread crumbs (I used parmesan herb panko)
  • kosher salt, pepper
Instructions
  1. Put the cream cheese, crab, sweet Thai chili sauce, green onions, lemon juice, and Old Bay in a bowl. Stir until combined.

  2. Cut the jalapenos in half lengthwise. Use a spoon to scrape out the seeds and white parts. Use kitchen gloves for this if you have sensitive skin.

  3. Fill each jalapeno with some of the crab mixture and sprinkle the panko bread crumbs over top (or put the panko on a plate and turn the stuffed jalapenos upside down and into the panko so it sticks to the filling). Place on a baking sheet.

  4. Season the jalapenos with kosher salt and pepper over top and bake in a 400 degree oven for 25 to 30 minutes. Serve with some extra Thai chili sauce for dipping if desired.
