Ingredients
  • cooking oil of choice
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 pound ground beef
  • 6 cloves garlic minced
  • kosher salt, pepper
  • 1/3 cup Bachan's Chili Sesame Sauce (or any Asian stir fry sauce or teriyaki sauce)
  • 2 lime wedges
  • 4 avocados
  • Toppings: spicy mayo, sesame seeds, cilantro
Instructions
  1. Preheat a large skillet or Blackstone griddle to medium. Add cooking oil of choice and the red and green peppers. Cook 4 minutes, mixing a few times.

  2. Add the ground beef, garlic, kosher salt, and pepper to the skillet or griddle. Cook 4 to 5 minutes, mixing with the peppers and breaking apart the ground beef.

  3. Use a paper towel to soak up some of the grease from the meat. Add the Chili Sesame sauce and cook 2 to 3 more minutes, mixing.

  4. Remove the ground beef and let it cool slightly. Cut the avocados in half, remove the pit and scoop out some of the center. Squeeze the lime wedges on the avocados and season with kosher salt and pepper.

  5. Serve the beef in the avocado halves with the avocado that was scooped out and toppings such as spicy mayo, sesame seeds, and cilantro.

Note: You can also store the beef in the fridge, warm it up slightly, and assemble your stuffed avocados right before serving for a healthy meal throughout the week.
