Ingredients
  • cooking oil of choice
  • 8 ounces sliced baby portobello mushrooms
  • 1 zucchini sliced into half circles, half inch thick
  • kosher salt, pepper
  • 5 to 6 cloves garlic minced
  • 1/4 cup shredded parmesan cheese
Instructions
  1. Preheat the griddle to medium heat for a few minutes. Add some cooking oil and the sliced mushrooms. Cook 3 to 4 minutes, mixing together with hibachi spatulas,

  2. Add the zucchini, kosher salt, and pepper. Cook 3 to 4 more minutes, mixing a few times.

  3. Add the minced garlic and cook 2 to 3 more minutes. Sprinkle the parmesan cheese over top and let it melt slightly before removing from the griddle.
