Ingredients
  • 4 packages ramen noodles (any flavor)
  • 3 tablespoons vegetable oil
  • 1 pound chicken breasts or thighs cut in bite size pieces
  • kosher salt, pepper
  • 1/2 cup teriyaki sauce (I used Kikkoman with no high fructose corn syrup)
  • 1 onion diced
  • 5 to 6 cloves garlic minced
  • 2 tablespoons soy sauce
  • 3 tablespoons butter
  • 3 eggs
  • 1 bunch green onions cut in 2 inch pieces
  • Optional: yum yum sauce, sriracha
Instructions
  1. Discard the flavor packet from the ramen noodles. Boil the noodles according to package directions, drain and rinse very well with cold water.

  2. Set a large skillet or wok over medium high heat. Add 1 tablespoon of the vegetable oil, chicken, kosher salt, pepper, and 2 to 3 tablespoons of the teriyaki sauce.

  3. Cook 3 to 4 minutes, stirring a few times, remove the chicken and set aside.

  4. Keep the large skillet or wok over medium high heat. Add the remaining 2 tablespoons vegetable oil and onion. Cook a minute or two then add the garlic, cooked noodles, remaining teriyaki sauce, and soy sauce. Cook 2 to 3 minutes, stirring and flipping the noodles.

  5. Add the butter and eggs, cook 3 to 4 minutes stirring throughout and pressing the noodles into the skillet or wok. Add the green onions, cooked chicken, and cook another 2 or 3 minutes.

  6. Serve with yum yum sauce and sriracha if desired.
