Breaded shrimp air fried to perfection and served in a warm tortilla with bang bang sauce
Pat the shrimp dry with paper towels.
In a bowl whisk together the eggs and soy sauce. Pour the panko bread crumbs in another bowl. Put each shrimp in the egg mixture and then into the panko, pressing the bread crumbs into the shrimp. Place the shrimp in the air fryer basket in a single layer, repeat with remaining shrimp. (Shrimp could also be placed on a lined baking sheet and baked in a 400 degree oven for 10 minutes)
Note: Depending on size of air fryer this may need to be done in 2 batches.
Spray the shrimp lightly with olive oil spray. Set the air fryer to 400 degrees for 10 minutes.
While the shrimp cook, combine the mayo, sweet Thai chili sauce, and Sriracha to make the Bang Bang sauce. Set aside.
In a skillet over medium heat, place each tortilla in the pan for 30 seconds on each side to warm them.
On each tortilla add some shredded cabbage, cilantro, green onions, and shrimp. Drizzle the Bang Bang sauce over top.
