Air Fryer Coconut Chicken has a crispy, crunchy breading of panko bread crumbs and coconut flakes and dipped in sweet chili sauce

Ingredients
  • 1 1/2 pounds chicken breast
  • 1 egg
  • 1/2 cup panko bread crumbs
  • 1/2 cup sweetened coconut flakes
  • kosher salt, pepper
  • olive oil cooking spray (I used Pam)
  • 4 oz sweet chili sauce
Instructions
  1. Cut the chicken into bite size pieces. Crack the egg in a bowl and beat with a fork. Put the panko, coconut flakes, kosher salt, and pepper in another bowl and mix together.

  2. Dip each piece of chicken into the egg and then into the panko coconut breading, press the breading slightly so it sticks to the chicken.

  3. Place the chicken in the air fryer basket and spray the top with olive oil cooking spray. Set the air fryer to 390 degrees for 15 minutes.

    Note: Depending on the size of your air fryer, this may need to be cooked in 2 batches.

  4. Serve the chicken with the sweet chili sauce for dipping.
