Homemade chicken meatballs baked in marinara sauce and topped with lots of cheesy goodness

Ingredients
  • 1 onion diced
  • 1/2 Tbsp olive oil
  • 1 pound ground chicken
  • 1/2 cup Italian bread crumbs
  • 4-5 cloves garlic minced
  • 1 egg
  • 1/4 cup grated parmesan cheese
  • 1/2 Tbsp kosher salt
  • 1 tsp pepper
  • 1 24 oz jar tomato pasta sauce
  • 4 oz fresh mozzarella cheese sliced
  • Optional: fresh basil for garnish
Instructions
  1. In a small skillet over medium heat add the olive oil and diced onion. Cook 4-5 minutes.

  2. In a bowl add the cooked onion, ground chicken, bread crumbs, garlic, egg, parmesan cheese, kosher salt, and pepper. Mix together with your hands until evenly combined. Roll 8 meatballs with your hands and place in a casserole dish.

    Note: Meatballs can be made a day ahead and stored in the fridge until ready to cook.

  3. Bake at 400 degrees for 30 minutes. Add the tomato pasta sauce and top each meatball with a slice of fresh mozzarella cheese. Bake an additional 10-15 minutes.

  4. Top with fresh basil if desired. Serve with garlic bread.
