Ingredients
  • 1 whole chicken (4-6 pounds)
  • 2 Tbsps soy sauce
  • 2 Tbsps Caribbean Jerk seasoning
  • 2 Tbsps brown sugar
  • 1 12 oz can beer
  • Optional: 6 pieces of whole allspice, bay leaf, fresh thyme
Instructions
  1. Brush all sides of the chicken with soy sauce. Sprinkle the Caribbean Jerk seasoning and brown sugar over all sides of the chicken.

  2. Open the beer and pour 1/2 of the beer out (or drink it). If you are using the allspice, bay leaf, and fresh thyme, put them inside the beer can. Put the beer can in a foil pan and sit the chicken cavity over the can, adjust the chicken so it is sitting upright on the can.

  3. In the smoker: Set the smoker to 275 degrees, place the chicken on the smoker for approx 4 hours, depending on size of chicken. Internal temp should be 170 degrees.

In the oven: Move the oven rack to a lower level. Place the foil pan with the chicken in a 375 degree oven for approx 1 hour and 15 minutes. Internal temp should be 170 degrees.
