Ingredients
  • 4 pounds tomatoes of choice
  • 1 onion diced
  • 1 cup sugar
  • 3/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/2 Tbsp kosher salt
  • 1/2 Tbsp ground cumin
  • 1/2 Tbsp ground coriander
  • 1/2 Tbsp crushed red pepper flakes
  • 3 Tbsps lemon juice
Instructions
  1. Cut the tomatoes into inch size pieces and put them in a large saucepan.

  2. Add the remaining ingredients and bring this mixture to a boil. Reduce the heat to simmer for 2 1/2 to 3 hours, stirring a few times.

  3. Let cool and put in containers and store in the fridge for up to a month. Serve with cheese, crackers, crostini, also a great addition to a charcuterie board.
