An easy appetizer or game day snack, the bacon on top gets super crispy!
Cut the jalapenos in half, remove the seeds and white parts by scraping them with a spoon into a bowl or garbage can. (Highly recommended to wear plastic gloves and protective eye glasses).
Lay the jalapeno halves cut side up on a baking sheet. Spread the goat cheese or cream cheese into each jalapeno.
Cut each slice of bacon into 3 equal pieces. Place the bacon in a skillet over medium low heat only for a minute or 2 per side. You do not want the bacon fully cooked, as it will finish cooking in the oven.
Place each piece of bacon over top of each jalapeno, slightly pressing it into the cheese filling. Sprinkle the bacon with brown sugar.
Place the baking sheet into a 400 degree oven for 15 minutes. Let cool slightly before serving.
