Grilled steak served over lettuce with yummy toppings such as corn, avocado, and fresh tomatoes!
Whisk all ingredients together and set aside.
If skirt steak is not already seasoned, drizzle with olive oil and sprinkle with kosher salt and pepper. Also drizzle corn with olive oil and sprinkle with kosher salt and pepper.
Preheat the grill on medium to medium high heat and place the corn on the grill, turning every few minutes. After 5 minutes add the steak. Grill the steak 2 and a half minutes per side. (Total corn cook time 10 minutes, total steak cook time 5 minutes)
Let the steak and corn cool as you prepare the salads. Divide lettuce between 4 plates (or containers if meal prepping). Place avocados, cheese, and tomatoes onto the lettuce. Slice steak and cut the corn off the cob and add to the salad. Drizzle with light balsamic dressing.
